During distillation, liquids are heated, their components separated and the desired flavours concentrated. Every movement, every tool is part of the mystery of the traditional art of distillation. Insights into our craft
From raw material to a moment of pleasure
RAW MATERIALS
It all starts with selected fruits, grains or herbs. Some naturally contain sugar, others only develop their flavour through extraction.
DYING
Fermentable ingredients start to work: Sugar turns into alcohol.A lively process that lays the foundation for the first spirit.
EXTRACTION
Herbs, berries and spices release their delicate flavours.They are carefully extracted with patience and sensitivity.
DESTILLATION
In the copper stills, the noble is separated from the raw material.Sometimes a single distillation is enough for strong notes, sometimes a second run is needed to achieve a particularly fine flavour.
MIXING
Finally, the distillate is harmonised with water or other ingredients.This creates harmony in flavour - the distiller's finished work.




The raw materials
It is important to us that good spirits start at the source. That is why we select our raw materials with great care.



DRIED HERBS & FRUITS
Botanicals are the heart of every spirit with character. We use fresh or gently dried herbs, flowers and roots for our gin - carefully composed so that they unfold their full potential.
FRESH FRUIT & NUTS
Whether Williams pears, apples, raspberries or hazelnuts - we only use ripe, varietal fruit or spicy nuts with a full flavour. We process them carefully: sorted by hand, fermented or extracted in a controlled manner and then carefully distilled with a feel for what should be preserved. This is how the fruit or nut becomes a fine distillate.



FRESH WATER
Our water for blending - i.e. reducing to drinking strength - comes from the Harz National Park. It is soft, low in minerals and ideal for blending. The quality of the water has a direct influence on the result. It is decisive for the development of the flavour in the ready-to-drink spirit.
OUR HARZ DISTILLERS TEAM
We have a person behind every bottle. Someone who smells, tastes and tests. Someone who knows when the brandy is good - and when it's not.
Our Harz Distillers Walter, Felix and Matthias work with technology, but decide with experience and a desire for creativity in the development of fine spirits. They hear the quiet bubbling, smell the changes, know every curve in the process. This closeness to the product is what makes the difference. And the reason why our spirits are not just good, but genuine.
